This spaghetti squash recipe is a healthy alternative to pasta. It is exploding with tomato and cheese flavors. It is easy to make and the whole family will love it.
Cut a spaghetti squash in half, scoop out the seeds and roast peel side down on a baking sheet at 350 degrees for 45 minutes.
Using a fork scrape the inside of the spaghetti squash to create the noodle strands. Once it has been scooped out place squash noodles in the bottom of a greased 8x8 baking pan.
While squash is roasting sauté ground meat in a pan on medium high heat. Once it has finished cooking pour in your jarred sauce and cook until heated through.
Mix 1 cup of Mozzarella, sour cream, cream cheese, salt and pepper and mix it thoroughly. Pour and spread out on top of spaghetti squash noodles.
Pour sauce mixture onto the cheese spread and top with Mozzarella cheese. Bake in the oven for 30 minutes. Let it sit for 10 minutes before serving.
Tip: Cut off both ends of the spaghetti squash and then slice it down the middle while it is is a vertical position.
