Description

This delicious simple recipe is chock full of vegetables and flavor. This is the perfect meal that you won't even notice that it doesn't have any meat. It is fast and easy to make you can make it ahead or right before you serve it. 

Ingredients
  • 1 Cup Zucchini (Diced)
  • 1 Cup Pepper (Diced)
  • 1 Cup Onion (Diced)
  • 1.5 Cups Carrot (Diced)
  • 15 Ounces Canned Black Beans
  • 15 Ounces Canned Kidney Beans
  • 15 Ounces Canned Diced Tomatoes
  • 15 Ounces Canned Tomato Sauce
  • 1 tsp Salt ((to taste))
  • 1/2 tsp Pepper ((to taste))
  • Toppings
  • 1/4 Cup Cheddar Cheese (Shredded)
  • 3 Slices Avocado
  • 1 TBSP Sour Cream
Instructions
  1. Dice carrots, onion, zucchini, and bell pepper 

  2. Add olive oil to a pot on medium heat, add in vegetables and sauté until soften about 8 minutes. 

  3. Once vegetables have softened add in seasonings, tomato sauce, rinsed beans, and diced tomatoes. 

  4. Let simmer for at least 15 minutes while the flavors develop. 

  5. Portion into bowls and top with favorite toppings. Eat and enjoy

Note

This can be made in crockpot on low for 6 hours or cooked right on the stove.
