Simple twist on pasta sauce filled with zucchini and herbs.
2 cups Diced Zucchini
1 cup Diced White Onion
2 Cloves Minced Garlic
1 tbsp Olive Oil
32 oz Can Crushed No Salt Added Tomatoes
1 tbsp Chopped Parsley
1 tsp Italian Seasoning
½ tsp Black Pepper
⅛ tsp Salt
2 tsp Sugar
1 lb Pasta of choice (I used Penne)
Side Salad
2 cups Chopped Green Lettuce
4 tbsp Freshly Sliced Parmesan
2 tbsp Favorite Salad Dressing (I use fat free Ranch)
1 tbsp Sliced Roasted Almonds

Dice a white onion finely and dice 2 zucchinis. In a large pot on medium high heat add the olive oil and sauté onion and zucchini until softened (about 5-7 minutes).
